Milford Residents Open Beach Restaurant for Fourth Year

Blue Restaurant opened Friday, April 1 on Rehoboth Avenue in Rehoboth Beach, Delaware.  Owners and lifelong residents of Milford, Glenda and Chris Adkins, were standing proud as they opened their doors for their fourth consecutive year.  Since 2007 Blue has given Milfordians a location close by where they can enjoy a pleasant evening while dining on the freshest local seafood and their favorite libation.

Chef Glenda Adkins has been in the restaurant and catering business for eleven years.  Glenda studied culinary art in California under Chef Karsten Hart at the Château de Sureau and now prepares each course with precision and perfect execution.

From the beginning of each meal, Blue’s menu offers unique ideas to engage the entire table in a fun evening. The fondue pots are an entertaining way for dinner guests to cook food directly at the table.  Brie and crab, monkfish, shrimp and beef tenderloin are all variations on the fondue experience.  For vegetarian diners the scallion, leak and herb fondue is available served with tofu, mixed green vegetables their homemade aioli.

Throughout the season Chef Adkins prepares the freshest of fish including the Hawaiian native Hamachi, Opa and Kampachi fish.  They are flown overnight from the Pacific island. They also offer Chilean Sea Bass which is served over hominy corn palenta with tomatoes, basil and cheese and topped with fresh corn puree and Horseradish and Herb Encrusted Halibut, topped with lobster sauce and served over roasted spaghetti squash.  For those who prefer food from the land, Blue offers Rack of Lamb and an Espresso Rubbed Filet Mignon.

The front and rear outside seating offer patrons a choice between people watching on the Avenue or a secluded dining experience. Whether a fun night out with friends or just a romantic evening for two, blue offers a large selection of specialty cocktails and martinis.  Their house specialty is the “Blue” Margarita which is prepared with Milagro Silver Tequila, Grand Marnier, Fresh Lime, Agave Nectar and Blue Curacao.

Thursday night entertainment will start in May with Captain Mike performing classic rock and roll hits beginning at 6pm. Blue will be open in April at 5pm for dinner on Fridays and 12pm  for lunch and dinner on Saturdays. Starting April 21 Blue will be open Thursday through Monday serving lunch and dinner.  They will also be hosting an Easter Brunch from 10am to 3pm and dinner Easter night.
