La Vaquita Butcher Shop to open in former Pavlik’s building

The owners of Bibi’s Restaurant are renovating the former Pavlik’s Sub Shop for a new butcher shop called La Vaquitas

The owners of Bibi’s Restaurant, Luis and Guadalupe Hernandez are busy renovating the former Pavlik’s Sub Shop on North Walnut Street with plans to open a butcher shop in that location. The Hernandez family opened Bibi’s in 2014 in the Riverwalk Plaza.

“We are immigrants of Mexico and arrived in this country 21 years ago,” Luis said. “We began working at different places, starting in the kitchen and even washing dishes in Rehoboth restaurants. It was there that we learned that when there is consistency an d love in what you do, everything is possible.”

The couple noticed that there were not many butcher shops in the Milford area and felt that adding one in town would be beneficial to people who wanted fresh meat, including beef, pork and chicken. In addition to fresh meats, La Vaquita will offer seasoned meats that are designed to take home and put on the grill.

“We have had acceptance from so many people and are grateful to the people of Milford for their support,” Luis said. “The fact that they have trusted us, even during the pandemic, means so much to us and we felt this was a way to give back.” In December, Bibi’s was awarded the Best Taste award at the Chamber of Commerce for Greater Milford Holiday Auction for their tacos, falutas and salsas.

Bibi’s and La Vaquita will be a family-operated business as Luis and Guadalupe have three children who already work side-by-side with their parents in the restaurant. Now, visitors to the butcher shop will see their faces behind the meat counter as well. During the first months of the pandemic, Bibi’s fed 250 children free breakfast for several months as a way to give back to the community that has supported them.

“We plan to have a great grand opening,” Luis said. “We will offer many specials and surprise gifts once we are able to open the doors. We plan to open to the public March, if God allows, probably on the first Friday of the month. Just like in our restaurant, we plan to put a lot of love in our products because we know if we love it, our customers will as well. Our fresh meats will be of the highest grade and our seasoned meats will give our customers that authentic Bibi’s taste they have come to love using our ground own ground seasoning blends.”

La Vaquita will be located at 621 North Walnut Street in Milford.  Hours of operations will be announced after they have confirmed their grand opening date.
